Autoimmune diseases include rheumatoid arthritis, lupus erythematosus, ankylosing spondylitis, and the like. Autoimmune disorders are caused by the immune system attacking organs and tissues, mistaking them as foreign. Why does eating meat exacerbate autoimmune disorders? Proteins from animal- based foods are degraded to amino acids and oligopeptides in the digestive tract. Oligopeptides are small pieces of undigested proteins that cannot be absorbed by the intestines. In a healthy individual, these oligopeptides are excreted in the feces. On the other hand, in an individual who has leaky gut syndrome manifested by intestinal tight junction malfunction, these oligopeptides may pass through the gap created by that tight junction malfunction in the intestinal wall and enter the bloodstream. Leaky gut syndrome is common among patients with autoimmune disease. When an oligopeptide from animal protein enters the bloodstream, it can provoke an immune response. Immune cells start producing antibodies against invading oligopeptides, and if the amino acid sequence of the oligopeptide resembles that of a protein in the kidneys, the newly formed antibody may attack the kidneys, mistaking them as foreign, and cause renal damage. Likewise, if the amino acid sequence of the oligopeptide resembles that of a protein in the knee, the newly produced antibody may attack the knee and cause arthritis.

Why does eating vegetables not aggravate autoimmune disorders? Plants, such as vegetables, are genetically distinct from humans. None of the amino acid sequences of proteins from vegetables resemble those in humans. Even though the human body may produce antibodies against oligopeptides from vegetables, these antibodies will not attack the kidneys or knees because no plant-like protein exists in the human body. So patients with autoimmune disorders should eat more vegetables rather than meat. If meat is needed in a diet, fish or shellfish—species that are distant from humans in the evolutionary tree—are recommended.
